2-Minute Massaged Kale Salad

Kale salads are known for their hearty texture, but massaging the leaves with oil and citrus helps soften them quickly while enhancing flavour. This simple 2-minute massaged kale salad is an easy way to enjoy fresh greens with minimal preparation.

Using Udo’s Oil Blend adds a smooth, nutty flavour while helping coat the kale leaves as they soften. Once the kale has been gently massaged, it becomes more tender and ready to enjoy as a salad base or side dish.

This quick recipe can be enjoyed on its own or topped with your favourite additions such as nuts, seeds, fresh vegetables or grains.

 

Ingredients

  • 1 bunch kale, stems removed and leaves chopped
  • 1 Tbsp Udo’s Oil 3+6+9 Blend
  • 1 Tbsp lemon juice
  • 1 clove garlic, minced
  • Salt and freshly ground pepper to taste

Optional toppings: sliced avocado, nuts, seeds, or dried fruit

 

Method

  1. Place the chopped kale leaves into a large bowl.
  2. Add the lemon juice, Udo’s Oil Blend and minced garlic.
  3. Using clean hands, gently massage the mixture into the kale leaves for about 1–2 minutes until the leaves soften and darken in colour.
  4. Season with salt and freshly ground pepper.
  5. Serve immediately or add your preferred toppings before serving.

 

Tips

Massage thoroughly

Massaging the kale helps break down the tough fibres in the leaves, making them softer and easier to eat.

Add extra toppings

Try adding avocado, toasted seeds, chickpeas or roasted vegetables for a more substantial salad.

Let it rest

Allowing the salad to sit for a few minutes after massaging can further soften the leaves and deepen the flavour.
