Green Garden Sauce with Fresh Herbs and Udo's Oil

If you’re looking for a fresh, herb-packed sauce to elevate everyday meals, this green garden sauce is a simple and flavourful option. Made with a blend of fresh herbs, creamy tahini and bright lime juice, it comes together quickly in a food processor and can be used in many ways.

Drizzle it over salads, roasted vegetables or grain bowls, toss it through pasta, or serve it as a dip for fresh veggies and crackers. The combination of herbs and Udo’s Oil creates a creamy, vibrant sauce that adds colour and flavour to almost any dish.

 

Ingredients

  • 2 cups mixed garden herbs (tarragon, flat or curly parsley, sage, basil, etc.)
  • ½ cup chives, snipped (or chopped green onion or shallot)
  • ½ cup Udo’s Oil 3-6-9 Blend
  • ½ cup tahini
  • 1 large clove garlic, crushed
  • 2 fillets anchovies*
  • 2 tsp capers*
  • ¼ cup lime juice

 

Method

  1. Rinse and roughly chop the fresh herbs.
  2. Add the herbs and all remaining ingredients to a food processor or high-speed blender.
  3. Blend until the sauce becomes smooth and creamy.
  4. If needed, add a small amount of extra liquid to help the mixture blend to your desired consistency.
  5. Taste and adjust seasoning if required before serving.

 

*If you prefer not to use anchovies or capers, you can substitute soy sauce, tamari, fish sauce, or simply add salt to enhance the savoury flavour.
