Omega-3 Rich Eggplant Dip

Roasted eggplant dips are a staple in many Mediterranean-inspired dishes thanks to their creamy texture and rich flavour. This omega-3 rich eggplant dip combines roasted eggplant with tahini, garlic, lemon juice and warming spices to create a smooth and savoury spread.

Adding Udo’s Oil gives the dip a silky texture while providing essential fatty acids. The result is a versatile dip that works well for entertaining or everyday snacking.

Serve it with fresh vegetables, crackers, or warm pita bread, and finish with your favourite garnishes for extra flavour and texture.

 

Ingredients

For the Dip

  • 2 large eggplants (about 1 lb each)
  • 2 large garlic cloves, minced
  • ¼ cup tahini
  • ¼ cup Udo's Oil, plus extra for drizzling
  • ½ tsp ground cumin
  • ½ tsp paprika (smoked paprika works well)
  • ¼ tsp cayenne pepper
  • ½ tsp salt
  • ¼ cup lemon juice
  • ¼ cup chopped fresh parsley, packed (plus extra for garnish)

 

Optional Garnishes

  • Sliced sun-dried tomatoes
  • Chopped Kalamata olives (pitted)
  • Fresh basil and parsley
  • Pine nuts or toasted sesame seeds
  • Cayenne pepper
  • Extra Udo’s Oil

 

Method

  1. Preheat the oven to 220°C (425°F).
  2. Pierce the eggplants several times with a fork and place them on a baking tray. If they are large, they can be cut in half lengthwise and placed cut-side down on the tray.
  3. Roast the eggplants for about 30–35 minutes, or until they are tender when pierced with a fork.
  4. Allow the eggplants to cool slightly, then scoop the soft flesh from the skins and place it in a bowl. Discard the skins.
  5. Add the eggplant flesh to a blender or food processor along with the tahini, Udo’s Oil, lemon juice, garlic, cayenne pepper, paprika, cumin and salt.
  6. Blend until smooth and creamy. If you prefer a chunkier texture, mash the ingredients together in a bowl instead.
  7. Transfer the dip to a serving bowl and drizzle with additional Udo’s Oil.
  8. Top with parsley and any optional garnishes before serving.
